Yummy Tortilla Soup

This recipe is from one of our favorite resteraunts...I've made it twice in past 2 weeks! Love it!

Gristmill Chicken Tortilla Soup
Chicken Breasts
3 cans of chicken broth
1tsp. Salt
1/2 tsp. chili powder
1 tsp. cumin
1tsp. Garlic powder
1/4 tsp.pepper
1 can Rotel
Cilantro
Onion

I usually use 3 chicken breasts, two handfuls of fresh cilantro, and 1/2 to 3/4 of an onion (whatever you like). Sometimes I buy a rotisserie chicken from the grocery and use it instead of cooking chicken.
I also add a can of hominy (drained) to it.
Put in the crock pot and cook for about 3 hours.


I put tortilla chips in the bottom of the bowl and put cheese and avocado slices on top!

Over the weekend....



Over the weekend, my personal assistants and I painted! We worked all Friday night while Derek worked a high school playoff game and all day Saturday while he prepped for the Texas State game. They stand right next to me while I work and when I get the camera out, they sit and pose. It's hilarious! Saturday morning, I made a loaf of Lemon Poppy Seed bread for breakfast! Kennon called and I was talking to him in the bedroom and when I came back, Petty had helped himself to the bread- more than half the loaf. He can get anything off the counters.

Big Dog

Mom's request- new pics of the pups! So here they are! We knew Petty would be bigger than Isbell, but we had no clue that he would tower over her! He's huge- close to 60 lbs! I'm just glad he and Isbell get along so well, however, their favorite game is "wrestle mania" for the bone. We love them so much! Last night Derek said, "Isbell, I wish you could talk to me!" No telling what it will be like when we have kids!

Derek took me to the football expansion project Wednesday. It's amazing and I can't get over how fast they work! It will be ready on September 5th!

We interrupt this marriage for football season- just 1 month from today it starts...early, early Saturday mornings and jam packed weekends. Derek is working hard to get the stadium finished and it's looking really good. Can't wait to actually go inside and see everything!

We spent last week at the beach and loved it! We were a little sad to leave the pups behind though.... They were so happy to see us when we got back!

It's been a while since I've posted anything. Between the end of school and baseball, we've been pretty busy. Texas State won the conference! Then we went to Corpus for the conference tournament where they finished in 2nd place. After that, they received an NCAA regional bid. So we played in Austin and lost to Texas who is playing Southern Miss in the World Series tonight! I still can't believe my Eagles made it to Omaha! Since school has been out, I've been busy with staff development and planning for next year. I also decided to paint our den, kitchen and hallway. What a task, but I finished finally. I had 2 great helpers! They has been so much fun! The picture of them in the bed is my favorite. They laid on our bed one afternoon and watched the Animal Planet channel for hours while I painted! Petty is so big. He's going to be so much bigger than her!

Love Peter's Rabbits!




I finally took down my Peter's rabbits! They looked so cute together for Easter. I love all my Peter's Pottery! There is nothing like it in Texas! Petty broke one of my big bowls on our kitchen table and I cried. He pulled the table cloth off the table. We'll just get another one when we're home next!

Swine Flu

Last night on our way home from baseball, I got a phone call from our counselor telling me that school has been cancelled until May 11. I thought it was joke since we're testing this week, but it's not. Our entire district (Comal ISD) and New Braunfels ISD are completely shut down because of the Swine Flu. There are no cases at our school and only a few in the district. I feel so bad for the kids. Most of them love coming to school. We had so many fun things planned including our field trip to the Alamo. According to the district we won't have to make any days up- it's being treated like a natural disaster. We're all just sitting around waiting to see what going to happen next. Pray that everyone stays healthy! On a lighter note, I can paint, work in the yard, work out, or SLEEP PAST 5:30!

Go Mavs!





Derek and I went to see the Mavs/Spurs play last Monday and they lost. But last night they pulled it off and won the series against the Spurs! I'm so excited they won! I only got to take pictures during pregame because according to the ushers, I have a professional camera. But I did get some of Dampier(played at State when Derek was there) and Dirk warming up. I'm just glad they didn't take it from me!
